Leftovers (not typical in my house!) are even better as the flavors all blend nicely. My mom was British, I was born and lived in England, but when we moved to America even my mom made it with beef and still called it Shepherds pie. Lamb was not familiar to most Americans and has only recently grown in popularity. Shepherd's pie is traditionally made with a ground-lamb filling, but we make ours with ground beef. The sauce is really simple and flavorful, but the best part is the insanely fluffy mashed potato.
