Process red onion in a food processor until finely minced. Scoop onion into a piece of cheesecloth and squeeze as much moisture from the onion as possible. Return onion to food processor; add garlic and process until the garlic is well integrated. Blend marjoram, rosemary, kosher salt, and black pepper into the onion mixture.

  18. Get dried tyme

DIRECTIONS Combine all ingredients in a bowl, and mix well. You may want to use a dough-scraper to help keep the counter clean. So at our house, the homemade gyros are usually made with either ground beef, or a combination of pork and ground beef. I totally get that it's close to heresy to make a middle-eastern dish eaten originally by Muslims and Jews using Pork.

Instructions to make Homemade Gyros:

  2. And secondly a big thank you to @skunkmonkey101 as I used his tzatziki sauce recipe found on his profile.
  3. Thirdly: thank you to @taylor68too for her added seasoning suggestions! Now let's get to cooking!
  4. Remove bones from meat and rinse under cool water. Pat dry.
  5. Slice meat into thin 1/4 inch slices and each slice should be about 1-2 inches long.
  6. In a large bowl, mix all marinade/seasonings. Wisk well.
  7. Add sliced meat. And toss to coat well.
  8. Cover bowl and refridgerate for 1 hour to soak. Tossing every 15 minutes or so.
  9. In a large skillet, heat oil.
  10. Toss in meat mixture with all the marinade.
  11. Fry, tossing frequently until outsides of meat is seared and insides are still slightly pink. About 5-10 minutes.
  12. Drain meat from juices and set meat aside but keep warm. Reserve juices.
  13. In another skiller heat until hot.
  14. Lightly brush pitas with a bit of the reserved drippings/juices. This will give pitas a nice flavor.
  15. Cook pitas until nice n browned but not crispy. ( if u don't like your pitas cooked u can skip this process) spray pan with cooking spray as needed.
  16. TO SERVE:
  17. Place desired amount of meat onto a pita.
  18. Then garnish with onion,tomato and tzatziki sauce.
  19. Serve hot and enjoy!

Gyros are a delicious sandwich for lunch or dinner, with spiced, grilled meat topped with lettuce, tomato, onion, and a flavorful tzatziki sauce. You can find tzatziki in the refrigerated condiment section of the grocery store or make your own using Greek yogurt, sour cream, cucumber, and fresh dill.
