- Soften the onion & garlic in oil for 10 mins. Remove 4 tbsp and allow to cool
- Add all the remaining ingredients for the tomato sauce to the remaining softened onion/garlic and simmer for 20 minutes
- Mix all the meatball ingredients in a bowl and using your hands make a into balls. Each should be a bit bigger than a golf ball

- Fry the meatballs in oil in a pan for 5-10 mins
- Put the meatballs into the tomato sauce, cover and bake at 200 (180 fan) for 30 minutes. Uncover and bake for another 15 minutes. Optionally top with mozzarella at this point
Do not overbake them, or they will be dry. Line a baking sheet with foil and spray with non-stick spray. Combine the meat, egg, breadcrumbs, cheese, salt, garlic, onion, black pepper and parsley in a bowl. Stir just until combined, do not over mix. Combine all ingredients in a medium mixing bowl.
